possible autoimmune disease
I have several calcified lymph nodes (and can feel more developing), my doctor told me it's probably nothing. Another source told me that this symptom coupled with my frequent cold sores and cold hands/feet can signify an auto-immune disorder. I really hate to waste time and money on unnecessary tests, does this source's theory have any merit?
If so, does anyone know of any disorders that might fit? I do have joint issues, nothing serious, just annoying.

First, a calcified lymph node may be described like a scar, it is a sign of an infection that took place a long time ago. Usually, patients do not require any further testing or any treatment. However you should be aware that a calcified lymph node could physically erode into an airway. If that's the case, it may need to be removed.

Confirmatory tests may be expensive and may turn up to be a waste of time and money should you not have autoimmune disease at all, but it's the only way you can confirm whether you have disease or not. Guessing by looking at the symptoms without laboratory findings aren't really that accurate.
